A creamy and comforting crockpot pasta dish featuring tender chicken, sun-dried tomatoes, and Parmesan cheese, perfect for any dinner gathering.

  • 4 boneless, skinless chicken breasts
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces pasta (penne or rotini)
  • 1 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Place the chicken breasts in the crockpot and sprinkle with Italian seasoning, garlic powder, salt, and black pepper.
  2. Sprinkle chopped sun-dried tomatoes over the chicken. Pour in chicken broth and heavy cream, stirring gently to combine.
  3. Cover the crockpot and set it to cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender.
  4. About 30 minutes before serving, cook the pasta according to package instructions, then drain.
  5. Shred the chicken in the crockpot and stir in the cooked pasta and grated Parmesan cheese.
  6. Serve garnished with fresh basil.

Notes

Leftovers can be stored in an airtight container for 3-4 days in the fridge. Freeze for up to 3 months and thaw overnight before reheating.
