A quick and comforting take on the classic chicken pot pie, made in a skillet without the fuss of pastry.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup onion, diced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onions and carrots; sauté until onions are translucent.
  3. Stir in peas, garlic powder, onion powder, thyme, salt, and pepper.
  4. Pour in chicken broth and heavy cream; bring to a simmer.
  5. Add shredded chicken and cook for 5-10 minutes until heated through.

Notes

Use rotisserie chicken for quicker preparation. Feel free to add vegetables like corn or bell peppers according to your preference.
