Refreshing cucumber salad sandwiches perfect for summer picnics, tea parties, or a simple lunch.

Ingredients

  • 4 slices of bread (white or whole grain)
  • 1 large cucumber, sliced
  • 1/2 cup cream cheese, softened
  • 1 tablespoon dill (fresh or dried)
  • Salt and pepper to taste
  • Lettuce leaves (optional)

Instructions

  1. In a bowl, mix the softened cream cheese with dill, salt, and pepper until smooth.
  2. Spread the cream cheese mixture generously on each slice of bread.
  3. Layer cucumber slices on top of the cream cheese on two of the slices.
  4. Top with lettuce leaves if using.
  5. Place the other two slices of bread on top to complete your sandwiches and gently press down.
  6. Cut into quarters and serve.

Notes

For added zing, incorporate a squeeze of lemon juice into the cream cheese. Use firm cucumbers like English cucumbers for the best texture. Prepare the sandwiches right before serving to avoid sogginess.
