A comforting and flavorful low carb chicken casserole packed with chicken, broccoli, and creamy cheese.

  • 1 lb boneless, skinless chicken breast
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup shredded cheese (such as cheddar or mozzarella)
  • 1/2 cup cream cheese
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, bring water to a boil and add the chicken breast. Boil until fully cooked, about 15-20 minutes, then shred the chicken into bite-sized pieces.
  3. In a mixing bowl, combine the shredded chicken, broccoli florets, cauliflower florets, cream cheese, chicken broth, garlic powder, onion powder, salt, and pepper. Stir until well mixed.
  4. Transfer the mixture into a greased baking dish and spread evenly.
  5. Top with shredded cheese.
  6. Bake in the preheated oven for 25-30 minutes until the cheese is golden brown and bubbly.
  7. Let cool slightly before serving.

Notes

For a crunchier texture, add the cheese midway through baking. You can substitute broccoli and cauliflower with other low-carb vegetables.
