1 lb boneless, skinless chicken breast
1 cup broccoli florets
1 cup cauliflower florets
1 cup shredded cheese (such as cheddar or mozzarella)
1/2 cup cream cheese
1/2 cup chicken broth
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
Instructions
Preheat your oven to 350°F (175°C).
In a large pot, bring water to a boil and add the chicken breast. Boil until fully cooked, about 15-20 minutes, then shred the chicken into bite-sized pieces.
In a mixing bowl, combine the shredded chicken, broccoli florets, cauliflower florets, cream cheese, chicken broth, garlic powder, onion powder, salt, and pepper. Stir until well mixed.
Transfer the mixture into a greased baking dish and spread evenly.
Top with shredded cheese.
Bake in the preheated oven for 25-30 minutes until the cheese is golden brown and bubbly.
Let cool slightly before serving.
Notes
For a crunchier texture, add the cheese midway through baking. You can substitute broccoli and cauliflower with other low-carb vegetables.
