A vibrant, crunchy side dish combining roasted broccoli with zesty lemon and garlic flavors, perfect for any meal.

Ingredients

  • 1 bunch Broccoli florets
  • 1 cup Panko bread crumbs
  • 2 tablespoons Extra virgin olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1/2 teaspoon Red chili flakes
  • 1 teaspoon Sea salt
  • 1 tablespoon Fresh lemon juice
  • 1/4 cup Vegan walnut parmesan (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and chop the broccoli florets into bite-sized pieces.
  3. In a large mixing bowl, combine the panko bread crumbs, garlic powder, onion powder, red chili flakes, and sea salt. Mix until well incorporated.
  4. Add the olive oil to the broccoli in the mixing bowl. Toss to coat the florets evenly.
  5. Now, add the bread crumb mixture to the broccoli. Toss again until every piece is coated.
  6. Spread the coated broccoli onto a baking sheet in a single layer. Bake for about 18-20 minutes or until golden brown and crispy, flipping halfway.
  7. Once roasted, remove from the oven and immediately squeeze fresh lemon juice over the top. Sprinkle walnut parmesan if desired.
  8. Transfer your roasted broccoli to a serving platter and enjoy!

Notes

For a gluten-free option, use gluten-free panko. Store leftovers in an airtight container for up to three days.
