A quick and nutritious take on classic chicken parmesan that evokes nostalgic family dinners, featuring creamy cottage cheese and a gooey mozzarella topping.

Ingredients

  • 1 cup cottage cheese
  • 1 cup cooked chicken, shredded
  • 1 cup marinara sauce
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the shredded cooked chicken with the marinara sauce, Italian seasoning, and a sprinkle of salt and pepper. Stir until the chicken is thoroughly coated.
  3. Spread half of the chicken mixture into the bottom of a baking dish. Add the cottage cheese and layer with mozzarella cheese.
  4. Layer the remaining chicken mixture over the cheeses and finish with grated Parmesan cheese on top.
  5. Bake in the oven for 20-25 minutes until the cheese is bubbly and golden brown.
  6. Let cool for a few minutes and garnish with freshly chopped basil before serving.

Notes

For a spicier version, add red pepper flakes to the chicken mixture. Store leftovers in an airtight container in the refrigerator for up to 3 days.
