A quick and comforting egg fried rice recipe, perfect for a family meal and versatile for any leftover vegetables.

Ingredients

  • 2 cups cooked rice
  • 2 eggs
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large frying pan or wok over medium heat.
  2. Scramble the eggs in the pan until fully cooked, then remove and set aside.
  3. In the same pan, add the mixed vegetables and sauté for a few minutes until tender.
  4. Add the cooked rice to the pan, breaking up any clumps.
  5. Stir in the soy sauce, and mix well.
  6. Add the scrambled eggs back into the pan, along with the chopped green onions.
  7. Season with salt and pepper to taste, and stir everything together.
  8. Cook for an additional 2-3 minutes until everything is heated through.
  9. Serve hot and enjoy your scrumptious egg fried rice!

Notes

Use day-old rice for the best texture. Feel free to switch up the vegetables based on what you have on hand.
