Delicious and nutritious egg white bites packed with vibrant vegetables, perfect for a quick breakfast or snack.

Ingredients

  • 6 egg whites
  • 1/2 cup diced bell peppers
  • 1/2 cup chopped spinach
  • 1/4 cup diced onion
  • Salt and pepper to taste
  • Cooking spray or oil for greasing the muffin tin

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the egg whites with a pinch of salt and pepper.
  3. Grease a muffin tin with cooking spray or a little oil.
  4. Divide the diced bell peppers, chopped spinach, and diced onion among the muffin cups.
  5. Pour the egg white mixture over the vegetables, filling each cup about 2/3 full.
  6. Bake in the preheated oven for 20-25 minutes until set and lightly golden.
  7. Allow to cool slightly before removing from the muffin tin.
  8. Serve warm or store in the refrigerator for later.

Notes

These bites can be enjoyed warm or cold and stored in an airtight container for up to 4 days.
