Eggplant Roll-Ups

A delightful dish featuring tender eggplant slices filled with creamy ricotta and sautéed spinach, all wrapped in a layer of marinara sauce and topped with melted Parmesan.

Ingredients

  • 2 large eggplants
  • 1 cup ricotta cheese
  • 2 cups fresh spinach, sautéed
  • 1 cup marinara sauce
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplants lengthwise into thin strips, about ¼ inch thick.
  3. Sprinkle salt on the eggplant slices and let them rest for about 30 minutes to draw out moisture.
  4. Mix the ricotta cheese, sautéed spinach, salt, and pepper in a bowl.
  5. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  6. Take an eggplant slice, add a spoonful of the ricotta-spinach mixture, and roll it up. Place the roll seam-side down in the baking dish.
  7. Pour the remaining marinara sauce over the roll-ups and sprinkle with Parmesan cheese.
  8. Cover the dish with foil and bake for 25 minutes.
  9. Remove the foil and bake for an additional 10 minutes until bubbly and golden.
  10. Garnish with fresh basil before serving.

Notes

These roll-ups are not only delicious but also make for an impressive presentation. Pair them with a simple side salad or garlic bread for an enhanced experience.
