  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup Greek yogurt
  • 2 large eggs
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • Butter or oil for cooking

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  2. In another bowl, mix the Greek yogurt, eggs, milk, and vanilla extract until smooth.
  3. Gently combine the wet ingredients with the dry ingredients, stirring until just combined.
  4. Heat a non-stick skillet over medium heat and add a little butter or oil.
  5. Pour 1/4 cup of batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface, about 2-3 minutes.
  7. Flip the pancakes and cook until golden brown on the other side, about 1-2 minutes.
  8. Serve warm with your favorite toppings.

Notes

Don’t overmix the batter for the fluffiest pancakes. Leftover pancakes can be stored in an airtight container in the refrigerator for up to 3 days.
