Light and fluffy protein pancakes made with wholesome oats and protein powder, perfect for a healthy breakfast or post-workout snack.

Ingredients

  • 1 cup oats (blended into flour)
  • 1 scoop protein powder
  • 1 teaspoon baking powder
  • 1 large egg
  • 1 cup milk (or almond milk)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Toppings of choice (e.g., fruit, syrup, yogurt)

Instructions

  1. In a bowl, mix the oat flour, protein powder, baking powder, and salt.
  2. In another bowl, beat the egg and then add the milk and vanilla extract.
  3. Combine the wet and dry ingredients and stir until just mixed; a few lumps are okay.
  4. Heat a skillet over medium heat and lightly grease it.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake, leaving space for them to spread.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  7. Serve hot with your favorite toppings.

Notes

Store leftover pancakes in an airtight container in the fridge for up to 3 days. Reheat in a toaster or microwave.
