Delicious and fluffy whole wheat pancakes perfect for family breakfasts.

  • 1 cup whole wheat flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter or oil
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together the whole wheat flour, sugar, baking powder, and salt.
  2. In a separate bowl, combine the milk, egg, melted butter or oil, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined; don’t over-mix.
  4. Preheat a skillet or griddle over medium heat and lightly grease it with butter or oil.
  5. Pour 1/4 cup of batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  7. Serve warm with your favorite toppings.

Notes

For extra fluffiness, let the batter rest for a few minutes before cooking.
