A heartwarming bake featuring caramelized onions, tender chicken, and bubbling cheese, all nestled together with fluffy rice.

  • 2 cups cooked rice
  • 1 lb chicken breast, diced
  • 1 large onion, sliced
  • 2 cups French onion soup
  • 1 cup shredded cheese (Gruyère or Swiss)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté the sliced onion until caramelized.
  3. In a large mixing bowl, combine the cooked rice, diced chicken, caramelized onions, and French onion soup. Stir until well mixed.
  4. Transfer the mixture to a greased baking dish and top with shredded cheese.
  5. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  6. Garnish with fresh parsley before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. For freezing, cover tightly with foil and it will keep for up to 2-3 months.
