Delicious and guilt-free chocolate brownie bites made with cottage cheese for a rich and fudgy texture.

Ingredients

  • 1 cup cottage cheese
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • Chocolate chips (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a blender, combine cottage cheese, cocoa powder, almond flour, honey (or maple syrup), melted coconut oil, eggs, vanilla extract, baking powder, and salt. Blend until smooth.
  3. Pour the batter into the prepared mini muffin tin, filling each cup about 2/3 full.
  4. If desired, sprinkle chocolate chips on top of the batter.
  5. Bake for 15-18 minutes, or until a toothpick comes out clean.
  6. Allow to cool in the tin for a few minutes before removing. Enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to 5 days or freeze for up to a month.
