A soft and satisfying gluten-free flatbread perfect for wraps, dips, or as a base for mini pizzas.

Ingredients

  • 2 cups Gluten-Free Flour
  • 1 cup Greek Yogurt
  • 1 tablespoon Baking Powder
  • 1 teaspoon Salt
  • 2 tablespoons Olive Oil

Instructions

  1. Mix the gluten-free flour, baking powder, and salt in a large mixing bowl.
  2. Add the Greek yogurt into the dry mix and stir with a spatula.
  3. Incorporate the olive oil and mix until the dough forms.
  4. Knead the dough on a floured surface until smooth for about 2-3 minutes.
  5. Roll out the dough into four equal parts, each about 1/4 inch thick.
  6. Heat a skillet over medium-high heat.
  7. Cook one rolled-out dough circle for 2-3 minutes until bubbles form, then flip and cook for another 1-2 minutes.
  8. Keep warm by covering with a clean kitchen towel while repeating with the remaining dough.

Notes

Store leftovers in an airtight container at room temperature for up to 2 days or freeze for up to 1 month.
