A cozy and flavorful Ground Chicken Taco Casserole that combines ground chicken with black beans, corn, and zesty salsa, topped with melted cheese.

Ingredients

  • 1 lb ground chicken
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 1 cup salsa
  • 2 cups cooked rice
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the ground chicken over medium heat until it’s browned and cooked through.
  3. Stir in the black beans, corn, taco seasoning, salsa, and rice. Mix well and season with salt and pepper to taste.
  4. Transfer the mixture to a baking dish and sprinkle shredded cheese on top.
  5. Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.
  6. Garnish with fresh cilantro if desired and serve warm.

Notes
