Nutritious and tasty cookies, naturally sweetened with bananas and honey, perfect for breakfast or as a snack.

  • 2 medium ripe bananas, mashed
  • 1/2 cup unsweetened applesauce
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1 1/2 cups rolled oats
  • 2 tablespoons oat flour
  • 2 teaspoons cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup raisins

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine the mashed bananas, applesauce, honey, and vanilla extract in a blender or with a hand mixer until smooth.
  3. In a medium bowl, mix together the rolled oats, oat flour, cinnamon, baking powder, and salt.
  4. Pour the banana mixture into the dry ingredients and stir thoroughly, then gently fold in the raisins.
  5. Drop 1-inch cookie dough balls onto the baking sheet, flattening the tops slightly.
  6. Bake for 15 to 20 minutes, or until golden brown and set in the center.
  7. Cool the cookies on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Store cookies in an airtight container for 3 to 5 days or freeze for up to 3 months. Use very ripe bananas for optimal sweetness.
