Delightful lemon bars made with wholesome ingredients, offering a balance of sweetness and tang, perfect for any occasion.

Ingredients

  • 1/4 cup maple syrup
  • 1/3 cup ghee, melted and cooled
  • 1 large egg
  • 2/3 cup Bob’s Red Mill Coconut Flour
  • 1/4 cup Bob’s Red Mill Tapioca Flour
  • ½ teaspoon lemon zest (zest of about 1/2 lemon)
  • 2 teaspoons vanilla extract
  • 1/2 cup lemon juice, freshly squeezed (about 45 lemons)
  • 1 1/2 tablespoons lemon zest (zest of about 2 lemons)
  • 1/3 cup maple syrup
  • 4 large eggs
  • 2 tablespoons tapioca flour

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine maple syrup, cooled melted ghee, vanilla extract, and one egg.
  3. In a separate bowl, mix coconut flour, tapioca flour, and lemon zest. Gradually add wet mixture to dry ingredients, stirring to combine.
  4. Press the dough into an 8×8-inch baking pan lined with parchment paper.
  5. Bake the crust for 8-10 minutes until set and slightly golden.
  6. In another bowl, whisk together remaining eggs, lemon zest, maple syrup, lemon juice, and tapioca flour until smooth.
  7. Remove the crust from the oven and pour the lemon filling over the crust immediately.
  8. Lower the oven temperature to 325°F (160°C) and bake for 14-16 minutes.
  9. Let the bars cool at room temperature, then refrigerate for at least 90 minutes before slicing.
  10. Cut into 9 squares and serve chilled.

Notes

Serve with whipped topping or powdered sugar for extra sweetness. Store in an airtight container for up to a week or freeze for up to three months.
