A healthy take on the classic Sloppy Joes made with lean ground turkey and colorful veggies for a guilt-free meal that satisfies.

Ingredients

  • 1 lb ground turkey
  • 1 cup diced bell peppers
  • 1 small onion, diced
  • 1 cup tomato sauce
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Whole grain buns

Instructions

  1. In a large skillet over medium heat, add the ground turkey and cook until browned, about 7-10 minutes. If necessary, drain any excess fat.
  2. Add the diced onion and bell peppers to the skillet and cook until softened, approximately 5 minutes.
  3. Stir in the tomato sauce, ketchup, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix everything well.
  4. Let the mixture simmer for about 10 minutes.
  5. Serve the sloppy joe mixture on whole grain buns.

Notes

For a spicier kick, add jalapeños or red pepper flakes. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
