A delicious and comforting breakfast casserole filled with eggs, cottage cheese, turkey sausage, and a mix of vegetables.

  • 6 large eggs
  • 1 cup cottage cheese
  • 1 cup turkey sausage, cooked and crumbled
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup diced vegetables (bell peppers, onions, spinach, etc.)
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Olive oil or cooking spray (for greasing the baking dish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the eggs, cottage cheese, garlic powder, onion powder, salt, and pepper until well combined.
  3. Stir in the cooked turkey sausage, shredded cheese, and diced vegetables.
  4. Grease your baking dish with olive oil or cooking spray.
  5. Pour the mixture into the prepared baking dish, spreading it evenly.
  6. Bake in the preheated oven for 30-35 minutes, or until set and lightly golden.
  7. Allow to cool slightly before cutting into squares and serve.
