A flavorful one-pot dish that combines long-grain rice, smoked sausage, and Cajun spices, bringing a taste of Louisiana to your kitchen.

Ingredients

  • 2 cups long-grain rice
  • 4 cups chicken broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 pound smoked sausage, sliced
  • 1 can diced tomatoes with green chilies
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)

Instructions

  1. Heat the olive oil over medium heat in a large pot.
  2. Add the onion, bell pepper, and garlic, and sauté until softened and fragrant, about 3-4 minutes.
  3. Stir in the sliced sausage and cook until browned, about 5-6 minutes.
  4. Add the rice and Cajun seasoning, stirring to coat the rice.
  5. Pour in the chicken broth and diced tomatoes, mixing well.
  6. Bring the mixture to a boil, then reduce heat to low, cover, and let it simmer for about 20-25 minutes.
  7. Once the rice is tender, season with salt and pepper to taste.
  8. Fluff the rice with a fork and garnish with chopped green onions before serving.

Notes

Feel free to swap out smoked sausage for chicken or shrimp, or add in your favorite vegetables. Adjust the spice level by adding more Cajun seasoning based on your preference.
