High Protein Chicken Ranch Quesadilla

A comforting quesadilla packed with protein from chicken and cheese, complemented by creamy ranch dressing and colorful vegetables.

Ingredients

  • 2 whole wheat tortillas
  • 1 cup cooked chicken, shredded
  • 1/2 cup ranch dressing
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup bell peppers, diced
  • 1/4 cup green onions, sliced
  • Salt and pepper to taste
  • Olive oil or cooking spray for frying

Instructions

  1. In a bowl, mix shredded chicken, ranch dressing, diced bell peppers, and green onions. Season with salt and pepper.
  2. Heat a non-stick skillet over medium heat and add olive oil or cooking spray.
  3. Place one tortilla in the skillet, layer half of the cheese on it, spread the chicken mixture on top, then add remaining cheese.
  4. Top with the second tortilla and cook until the bottom is golden and the cheese starts to melt, about 3-4 minutes.
  5. Carefully flip the quesadilla and cook on the other side until golden and crispy.
  6. Remove from skillet, let cool slightly, cut into wedges and serve.

Notes

Customize your filling with different vegetables. Add black beans or chickpeas for extra protein.
