A delightful loaf of oatmeal raisin bread swirled with cinnamon sugar, perfect for breakfast or a cozy afternoon snack.

  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 cup quick-cooking oats
  • 0.5 tsp salt
  • 0.5 cup white granulated sugar
  • 2 large eggs
  • 1 cup buttermilk
  • 0.25 cup sour cream
  • 0.5 cup butter (melted, 1 stick)
  • 1 tsp vanilla extract
  • 0.75 cup raisins (up to 1 cup)
  • 0.5 cup brown sugar
  • 1 tsp ground cinnamon
  • 0.25 tsp nutmeg
  • 0.5 cup nut pieces (pecans or walnuts, optional)
  • 0.75 cup powdered sugar
  • 3 tbsp milk (34 tablespoons)
  • 0.5 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F and spray a 9×5 inch loaf pan with cooking spray.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, oats, and salt until well combined.
  3. In a separate bowl, cream together the sugar and eggs. Then add the buttermilk, sour cream, melted butter, and vanilla extract. Beat with a mixer until smooth and well combined.
  4. Pour the wet ingredients into the bowl with the dry ingredients. Stir gently until just combined; don’t worry if there are a few lumps remaining. Fold in the raisins carefully to avoid overmixing.
  5. In a small bowl, combine the brown sugar, ground cinnamon, nutmeg, and optional nuts.
  6. Pour the batter into the prepared loaf pan. Spread the cinnamon swirl mixture evenly over the top of the batter. Using a knife, cut into the batter while swirling it in a figure-eight motion to incorporate the swirl.
  7. Bake in the preheated oven for 65-70 minutes or until a toothpick inserted into the center comes out clean.
  8. Once baked, let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  9. Whisk together the powdered sugar, milk, and vanilla extract until smooth.
  10. Once the bread has cooled, drizzle the glaze over the top and serve it warm or at room temperature.

Notes

For variations, consider substituting raisins with dried cranberries or cherries, or adding chocolate chips for a sweet treat.
