Delightful rounds of roasted sweet potatoes topped with honey-glazed chickpeas and crumbled feta cheese, perfect for gatherings or as a light meal.

Ingredients

  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons honey
  • 1/2 cup feta cheese, crumbled
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice sweet potatoes into rounds about ½ inch thick and place them on a baking sheet.
  3. Drizzle the sweet potato rounds with olive oil, and season with salt, black pepper, paprika, and garlic powder. Mix well to coat.
  4. Bake for about 25-30 minutes, or until crispy on the outside and tender on the inside.
  5. In a separate bowl, mix chickpeas with honey and a pinch of salt.
  6. Remove sweet potatoes from the oven, top with honey-glazed chickpeas, and crumble feta cheese over each round.
  7. Serve warm and enjoy!
