  • 2 tablespoons Lime Juice (fresh)
  • 1 teaspoon Lime Zest
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic (Minced)
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked Paprika
  • to taste Salt & Pepper
  • 2 cups Cooked Jasmine or Basmati Rice
  • 1 medium Ripe Avocado (Mashed)
  • 1 tablespoon Extra Lime Juice
  • 1/4 cup Fresh Cilantro or Parsley (For garnish)
  • to taste Chili Flakes (Optional)
  • 2 tablespoons Toasted Sesame Seeds (Optional topping)

Instructions

  1. Begin by marinating the chicken breasts. In a bowl, mix together the honey, lime juice, lime zest, olive oil, minced garlic, cumin, smoked paprika, salt, and pepper. Coat the chicken breasts in this flavorful marinade—let them soak up all that goodness for at least 15 minutes!
  2. Heat a skillet over medium-high heat and add a splash of olive oil. Once hot, place the marinated chicken in the pan. Sauté for about 7-8 minutes on each side or until well-browned and cooked through.
  3. Once cooked, remove the chicken from the pan and let it rest for a few minutes.
  4. While the chicken rests, grab your ripe avocado and mash it in a bowl. Add a tablespoon of extra lime juice, a pinch of salt, and mix to taste.
  5. To plate, start with a generous scoop of the cooked rice, followed by sliced chicken breasts. Top with mashed avocado, garnishing with fresh cilantro or parsley. Sprinkle on toasted sesame seeds and chili flakes, if desired.
