A delightful combination of sweet and spicy chicken served over rice with vibrant vegetables.

Ingredients

  • 1 lb chicken breasts, cubed
  • 1/4 cup honey
  • 3 tablespoons sriracha sauce
  • 2 cups cooked rice
  • 1 tablespoon soy sauce
  • 1 tablespoon vegetable oil
  • 1 bell pepper, sliced
  • 1/2 cup broccoli florets
  • Green onions, for garnish
  • Sesame seeds, for garnish

Instructions

  1. In a bowl, mix honey and sriracha sauce. Set aside.
  2. Heat vegetable oil in a pan over medium heat. Add cubed chicken and cook until browned and completely cooked through, about 7-10 minutes.
  3. Add soy sauce, bell pepper, and broccoli to the pan. Stir-fry for about 5 minutes.
  4. Pour the honey sriracha mixture over the chicken and vegetables, mixing well to coat.
  5. Serve the chicken mixture over the cooked rice, garnishing with green onions and sesame seeds.

Notes

Adjust the sriracha to control spice level. This dish works great for meal prep.
