A quick and flavorful recipe for collard greens made in the Instant Pot, perfect as a side dish for any meal.

  • 1 bunch collard greens, chopped
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Heat the oil and sauté onions in the Instant Pot until softened, about 4-5 minutes.
  2. Add garlic and smoked paprika; sauté for another minute until fragrant.
  3. Mix in collard greens and vegetable broth, ensuring the greens are submerged.
  4. Pressure cook for 35 minutes.
  5. Release the pressure carefully once cooking time is up.
  6. Season with salt and pepper, and serve hot.

Notes

Wash collard greens thoroughly to remove grit. Store leftovers for up to 3 days in the fridge, or freeze for longer storage.
