Delightful Irish Soda Bread Muffins, soft and fluffy, perfect for breakfast or snacks.

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 3/4 cup buttermilk
  • 1/4 cup melted butter
  • 1 egg
  • 1 cup raisins or currants (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. In a large bowl, mix together the flour, baking soda, salt, and sugar.
  3. In another bowl, whisk together the buttermilk, melted butter, and egg.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the raisins or currants if using.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 15-20 minutes, until a toothpick comes out clean.
  8. Allow to cool slightly before serving.

Notes
