  • 2 cups Quick Oats (or pulsed old-fashioned rolled oats)
  • 1 cup Granulated Sugar
  • 1/2 cup Unsweetened Cocoa Powder
  • 1/2 cup Dairy-Free Milk (such as Almond Milk)
  • 1/2 cup Dairy-Free Butter (or coconut oil)
  • 1 cup Peanut Butter (or almond butter)
  • 1 teaspoon Vanilla Extract

Instructions

  1. Prepare your workspace by gathering all your ingredients and equipment.
  2. Melt the dairy-free butter with the dairy-free milk and cocoa powder over medium-low heat.
  3. Add the granulated sugar and bring to a gentle boil, stirring continuously for 1 minute.
  4. Mix in the peanut butter and vanilla extract until smooth.
  5. Combine the oats with the chocolate mixture until coated.
  6. Spoon tablespoonfuls onto wax paper or parchment-lined baking sheets.
  7. Let them cool at room temperature for about 30 minutes until set.

Notes

For a nut-free version, use sunflower seed butter instead of peanut butter. You can also customize with your favorite mix-ins such as chopped nuts or dried fruit.
