  • 2 teaspoons Active Dry Yeast (Ensure it’s gluten-free)
  • 1 cup Milk (Any milk such as almond or oat)
  • 1 cup Mashed Cooked Potato (Steam and mash white potato)
  • 5 tablespoons Butter (Plus 3 more for filling)
  • 1/3 cup Granulated Sugar (Consider stevia for healthier choice)
  • 1 teaspoon Salt
  • 2 large Eggs (Act as a binder)
  • 1 cup Brown Sugar (Use dark brown sugar for extra depth!)
  • 2 tablespoons Cinnamon
  • 2 cups Powdered Sugar
  • 8 ounces Cream Cheese (Use dairy-free if preferred)
  • 4 ounces Butter

Instructions

  1. Prepare the Yeast Mixture: In a small bowl, combine 1 cup of warmed milk, 2 teaspoons of active dry yeast, and a pinch of sugar. Let it sit for about 5-10 minutes until frothy.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together gluten-free flour, granulated sugar, and salt.
  3. Combine Wet Ingredients: In another bowl, mix the mashed potato, softened butter, and eggs. Blend until smooth.
  4. Incorporate Yeast Mixture: Add the frothy yeast mixture to the wet ingredients and stir until combined.
  5. Mix Everything Together: Gradually add the flour mixture to the wet mixture and stir until a soft dough forms.
  6. First Rise: Cover the bowl with a damp towel and let it rise in a warm place for about 1 hour.
  7. Make the Filling: In a small bowl, combine brown sugar, cinnamon, and softened butter until smooth.
  8. Roll Out the Dough: Turn the dough onto a floured surface and roll it out into a rectangle.
  9. Spread the Filling: Evenly spread the cinnamon filling over the dough.
  10. Roll and Cut: Roll the dough into a log and slice into 12 equal pieces.
  11. Second Rise: Place rolls in a greased dish, cover, and let rise for another 30-40 minutes.
  12. Bake to Perfection: Preheat the oven to 350°F (175°C) and bake for 20-25 minutes, or until golden.
  13. Make the Cream Cheese Frosting: Whip together cream cheese, softened butter, and powdered sugar until fluffy.
