A vibrant and flavorful Jalapeño Chicken Stir-Fry that’s quick to prepare and perfect for busy weeknights.

Ingredients

  • 2 chicken breasts, sliced
  • 1 tablespoon vegetable oil
  • 1 jalapeño, sliced
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Heat the vegetable oil in a large skillet over medium-high heat.
  2. Add the sliced chicken breasts to the skillet, cooking until they’re no longer pink, about 5-7 minutes.
  3. Introduce the onion, bell pepper, and jalapeño to the skillet; stir-fry for 3-4 minutes.
  4. Add the minced garlic and stir for another minute.
  5. Pour in the soy sauce and lime juice; season with salt and pepper.
  6. Serve hot over cooked rice, garnished with lime or cilantro.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat gently.
