Deliciously crispy bacon-wrapped eggrolls filled with creamy cheese and jalapeños, perfect for any gathering.

Ingredients

  • 8 eggroll wrappers
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup jalapeños, diced (fresh or pickled)
  • 12 slices of bacon
  • Cooking spray
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix cream cheese, cheddar cheese, jalapeños, salt, and pepper until well combined.
  3. Place about 2 tablespoons of cheese mixture into the center of each eggroll wrapper.
  4. Roll the wrappers according to package instructions, sealing the edges tightly.
  5. Cut slices of bacon in half and wrap one half around each eggroll.
  6. Arrange wrapped eggrolls on a baking sheet and spray lightly with cooking spray.
  7. Bake for 15-20 minutes or until bacon is crispy and eggrolls are golden brown.
  8. Serve hot with your favorite dipping sauce.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for 10-15 minutes.
