A low-carb twist on the classic Reuben sandwich, these bite-sized roll-ups are crispy, satisfying, and packed with flavor.

Ingredients

  • 4 slices of deli corned beef
  • 4 slices of Swiss cheese
  • 1/4 cup sauerkraut, drained
  • 1 tablespoon mustard
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Lay out a slice of corned beef and place a slice of Swiss cheese on top.
  2. Add a tablespoon of sauerkraut and a teaspoon of mustard to your cheese-topped corned beef.
  3. Roll up the corned beef tightly, securing with toothpicks if needed.
  4. In a skillet, heat olive oil over medium heat until shimmering.
  5. Place the roll-ups seam side down in the skillet and cook until crispy and golden, about 3-4 minutes on each side.
  6. Remove from skillet, season with salt and pepper, and serve warm.

Notes

To keep roll-ups crispy, avoid overloading with filling. Use Dijon mustard for an extra flavor boost.
