  • 1 medium Onion (Use yellow or sweet onions for best results)
  • 3 cloves Garlic (Fresh garlic is recommended)
  • 4 cups Chicken Broth (Opt for low-sodium)
  • 14.5 ounces Diced Tomatoes (Canned or fresh)
  • 4 cups Fresh Spinach (Kale can be used as a substitute)
  • 2 teaspoons Italian Herbs (Use fresh basil, oregano, and thyme)
  • 1/2 teaspoon Red Pepper Flakes (Adjust to taste)
  • 1 cup Heavy Cream (Coconut cream can be used as a dairy-free alternative)
  • To taste: Salt, Pepper

Instructions

  1. Sauté the Sausage: In a large pot over medium heat, add the Italian sausage. Break it up with a wooden spoon, and cook until browned, about 6-8 minutes.
  2. Add Onions and Garlic: Once the sausage is browned, add the diced onion and minced garlic. Sauté together for about 3-4 minutes until the onions become translucent.
  3. Pour in the Chicken Broth: Carefully add the chicken broth, scraping the bottom of the pot to mix in all those delicious bits.
  4. Incorporate the Tomatoes: Stir in the diced tomatoes along with their juices. Let this simmer for about 5 minutes.
  5. Introduce Spinach and Herbs: Add the fresh spinach and Italian herbs to the pot. Stir well, and let the spinach wilt, about 2-3 minutes.
  6. Make it Creamy: Pour in the heavy cream, stirring continuously until everything is well combined.
