A vibrant and zesty dish featuring tender chicken, colorful vegetables, and orzo pasta, all brought together with the freshness of lemon.

Ingredients

  • 2 chicken breasts, diced
  • 1 cup orzo pasta
  • 1 cup broccoli florets
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the diced chicken along with the minced garlic, cooking until the chicken is browned and cooked through, about 5-7 minutes.
  2. Meanwhile, bring a pot of salted water to boil and cook the orzo according to package instructions until al dente. Drain and set aside.
  3. Add the broccoli florets, sliced bell pepper, and julienned carrot to the skillet. Stir-fry for about 5 minutes until the veggies are tender yet still crisp.
  4. Add the cooked orzo to the skillet, along with the fresh lemon juice, salt, and pepper. Stir gently to combine.
  5. Garnish with fresh chopped parsley before serving. Enjoy!

Notes

This dish can easily be customized with your choice of vegetables. For a vegetarian version, replace the chicken with firm tofu or chickpeas.
