A quick and delicious cod recipe with crispy skin, infused with lemon and garlic for a taste of the seaside.

  • 4 fillets Cod (or substitute with halibut or tilapia)
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoons Unsalted Butter (or olive oil)
  • 1 tablespoon Olive Oil (or any neutral oil)
  • 3 cloves Garlic (minced)
  • 1 tablespoon Lemon Juice (freshly squeezed)
  • 1 teaspoon Lemon Zest
  • Fresh Parsley, to taste (or substitute with dill or chives)

Instructions

  1. Season the cod with salt and pepper on both sides.
  2. Heat a large non-stick skillet over medium-high heat, and add butter and olive oil.
  3. Sear the cod fillets skin-side down for 5-7 minutes until crispy.
  4. Flip the fish and cook for an additional 3-5 minutes until opaque.
  5. Add minced garlic and stir in the last minute; squeeze lemon juice and sprinkle lemon zest.
  6. Remove from heat, add fresh parsley on top.
  7. Serve immediately with the crispy skin and flavorful butter sauce.

Notes

For best results, ensure fish is dry before cooking and avoid overcrowding the pan to achieve crispy skin.
