A vibrant, flavorful dish featuring grilled chicken marinated in lemon and herbs served over fluffy quinoa with fresh vegetables.

  • 2 chicken breasts
  • 1 cup quinoa
  • 1 lemon (zested and juiced)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • 1 avocado (sliced)
  • Fresh herbs (parsley or cilantro) for garnish

Instructions

  1. Cook quinoa according to package instructions and set aside.
  2. In a bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper.
  3. Marinate the chicken breasts in the mixture for at least 30 minutes.
  4. Preheat the grill to medium-high heat.
  5. Grill the chicken for about 6-7 minutes on each side, or until fully cooked.
  6. Let the chicken rest for a few minutes before slicing it.
  7. In a bowl, combine cooked quinoa, cherry tomatoes, cucumber, and grilled chicken.
  8. Top with avocado slices and garnish with fresh herbs. Serve immediately.
