A light and healthy Lemon Raspberry Bake that captures the flavors of summer, perfect as a breakfast bar, snack, or light dessert.

Ingredients

  • 1 cup raspberries
  • 1 cup Greek yogurt
  • 1/2 cup rolled oats
  • 1/4 cup honey or maple syrup
  • 1/4 cup lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, mix together Greek yogurt, oats, honey (or maple syrup), lemon juice, lemon zest, baking powder, vanilla extract, and salt until well combined.
  3. Gently fold in the raspberries, ensuring they’re evenly distributed throughout the mixture.
  4. Pour the mixture into the prepared baking dish and spread it evenly.
  5. Bake for 25-30 minutes, or until the top is golden and a toothpick comes out clean.
  6. Allow to cool before slicing into bars.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
