Tender and juicy chicken thighs marinated in a flavorful low-carb barbecue sauce, perfect for weeknight dinners or weekend gatherings.

  • 4 chicken thighs, skinless
  • 1/2 cup low-carb barbecue sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your grill or oven to medium-high heat.
  2. In a bowl, mix the olive oil, garlic powder, smoked paprika, salt, and pepper.
  3. Coat the chicken thighs generously with the seasoning mixture.
  4. Grill or bake the chicken thighs for about 6-8 minutes per side, or until fully cooked and the juices run clear.
  5. During the last few minutes of cooking, brush the low-carb barbecue sauce onto the chicken.
  6. Remove from heat, let rest for a few minutes, then serve.

Notes

Use a meat thermometer to check for doneness – aim for 165°F (75°C). Let them rest before slicing to keep them juicy.
