A moist and flavorful cake made with ripe bananas and crunchy pecans, perfect for any occasion.

  • 1.5 cups mashed ripe bananas
  • 0.5 cup granulated sugar
  • 0.5 cup brown sugar
  • 0.5 cup vegetable oil or melted butter
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp ground cinnamon
  • 0.25 tsp salt
  • 1 cup chopped pecans
  • 0.5 cup powdered sugar
  • 12 tbsp milk
  • 0.5 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour your cake pan or line it with parchment paper.
  2. In a large bowl, whisk together the mashed bananas, granulated sugar, brown sugar, oil (or melted butter), eggs, and 1 teaspoon of vanilla extract until smooth.
  3. In a separate bowl, combine the all-purpose flour, baking soda, baking powder, ground cinnamon, and salt. Stir to evenly distribute.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently to combine.
  5. Fold in the chopped pecans until evenly distributed.
  6. Pour the batter into the prepared cake pan and smooth the top. Bake for 35-45 minutes, or until a toothpick comes out clean.
  7. While the cake cools, whisk together the powdered sugar, milk, and remaining vanilla extract to make the glaze.
  8. Once cooled, drizzle the glaze over the cake, slice, serve, and enjoy!

Notes

Use overripe bananas for better flavor. For variations, consider walnuts or chocolate chips. Store in an airtight container.
