  • 2 medium Sweet Potatoes (~1.5 lbs, cubed)
  • 1 pound Brussels Sprouts (Halved or quartered)
  • 3 tablespoons Olive Oil (For roasting)
  • 1 cup Brown or Wild Rice (Uncooked)
  • 1/4 teaspoon Cinnamon
  • 1 teaspoon Fresh Rosemary
  • 1 cup Chopped Pecans (Sprinkle on before serving)
  • 1 cup Dried Cranberries
  • 1/4 cup Fresh Parsley (For garnishing)

Instructions

  1. Prepare your ingredients: Pound the chicken breasts to ensure even cooking and season with salt and pepper.
  2. Create the Maple Dijon marinade by whisking together Dijon mustard and maple syrup, then coat the chicken and let it marinate.
  3. Cook your rice according to package instructions (25-30 minutes) and set aside.
