  • 1 package gnocchi
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes
  • 1 cup spinach
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Parmesan cheese for garnish
  • Olive oil

Instructions

  1. In a large skillet, heat olive oil over medium heat. Season the chicken breasts liberally with salt, pepper, garlic powder, and onion powder. Cook until golden brown and cooked through, about 5-7 minutes per side, then remove from the skillet and set aside.
  2. In the same skillet, add the sun-dried tomatoes and sauté for about 2 minutes until they become fragrant.
  3. Pour in the chicken broth and heavy cream, stirring to combine everything into a creamy sauce.
  4. Add the gnocchi and cook according to package directions, typically about 2-3 minutes, until they start floating.
  5. Stir in the spinach, cooking until wilted.
  6. Cut the chicken into strips and return it to the skillet, mixing well into the creamy gnocchi and sauce.
  7. Serve hot, garnished generously with freshly grated Parmesan cheese.

Notes

For extra flavor, consider marinating the chicken with herbs a few hours beforehand. This dish can be made vegetarian by swapping chicken for mushrooms or chickpeas.
