A creamy and dreamy pasta dish featuring succulent chicken, vibrant veggies, and a luscious sauce—perfect for romantic dinners or family meals.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 8 oz penne pasta
  • 1 cup cream
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup sundried tomatoes, chopped
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1/2 cup white wine
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Cook the penne pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper, then add to the skillet. Cook until golden and cooked through, about 6-7 minutes per side. Remove from skillet and let rest.
  3. In the same skillet, add minced garlic and cook for 1 minute until fragrant.
  4. Pour in white wine and let it simmer for 2-3 minutes, allowing the flavors to meld beautifully.
  5. Stir in the diced tomatoes, sundried tomatoes, and cream; bring to a gentle simmer.
  6. Add fresh spinach and let it wilt, adding a vibrant burst of color and flavor to the sauce.
  7. Slice the cooked chicken and return it to the skillet, mixing it thoroughly to combine everything.
  8. Gently toss the penne pasta into the sauce, ensuring each piece is perfectly coated with that luscious, creamy goodness.
  9. Serve hot, garnished with grated Parmesan cheese, and prepare for the smiles!
