Ingredients

Scale
  • 4 cups Mashed potatoes
  • 3 Juicy chicken breasts
  • 1 cup Flour
  • 2 Eggs
  • 2 cups Bread crumbs
  • 4 tbsp Butter
  • 1/2 cup Heavy cream
  • 1 cup Cheddar cheese, shredded
  • 1 cup Chicken broth
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 cup Gravy

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Boil the potatoes until they’re tender, about 15 minutes. Drain and mash with butter and heavy cream.
  3. Set up a breading station with flour, beaten eggs, and bread crumbs.
  4. Dip each chicken breast into flour, egg, and bread crumbs to coat.
  5. Fry the chicken in oil over medium-high heat until golden brown, about 5-7 minutes per side.
  6. Layer the baking dish with mashed potatoes, then top with fried chicken.
  7. Pour chicken broth and warm gravy over the layers.
  8. Sprinkle shredded cheddar cheese on top.
  9. Bake for 25-30 minutes until bubbly and cheese is melted.
  10. Serve hot and enjoy!

Notes

For fluffier mashed potatoes, use starchy potatoes like Russets or Yukon Golds. Let the casserole sit for a few minutes after baking to stabilize layers for easier serving.
