A comforting and creamy potato soup made with leftover mashed potatoes, perfect for chilly days.

  • 4 cups mashed potatoes
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup milk
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Chives for garnish

Instructions

  1. Sauté the Aromatics: In a large pot, heat a drizzle of olive oil or a pat of butter over medium heat. Add the diced onion and minced garlic. Sauté until they’re soft and fragrant, about 4-5 minutes.
  2. Combine Ingredients: Add the 4 cups of mashed potatoes and 4 cups of your choice of broth to the pot. Stir thoroughly to combine, ensuring that there are no lumps.
  3. Simmer the Soup: Bring the mixture to a simmer over medium heat. Let it cook gently for about 10 minutes, stirring occasionally.
  4. Add Cream and Milk: Stir in the 1 cup of heavy cream and 1 cup of milk, mixing well. Season with salt and pepper to taste.
  5. Heat Through: Continue to heat the soup until it’s warmed through, taking care not to let it boil.
  6. Serve With Love: Ladle the soup into bowls and garnish with freshly chopped chives. Serve hot.
