A comforting meatball stroganoff with savory meatballs in a creamy sauce served over fluffy egg noodles.

Ingredients

Scale
  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 8 oz mushrooms, sliced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 cup sour cream
  • 12 oz extra-wide egg noodles
  • Chopped parsley for garnish

Instructions

  1. Prepare the Meatball Mixture: In a bowl, mix the ground beef, breadcrumbs, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Shape this flavorful mixture into meatballs, ensuring they’re all about the same size for even cooking.
  2. Sauté the Meatballs: In a large skillet, heat olive oil over medium heat. Add the meatballs to the skillet and cook until browned and cooked through, about 8-10 minutes. Once perfectly golden, remove the meatballs and set aside.
  3. Cook the Mushrooms: In the same skillet, add the sliced mushrooms and cook until they are tender and deeply aromatic. This will take about 4-5 minutes.
  4. Create the Flavorful Base: Pour in the beef broth and Worcestershire sauce, using a wooden spoon to scrape the delicious bits from the bottom of the pan. Bring the mixture to a gentle simmer.
  5. Add the Creaminess: Reduce the heat and stir in the sour cream until everything is combined and creamy. Return the meatballs to the sauce and let them heat through, soaking up all that rich flavor.
  6. Cook the Egg Noodles: While the meatballs are warming, cook the egg noodles according to package instructions and then drain them.
  7. Final Assembly: Serve the meatballs and sauce over a generous portion of egg noodles, garnished with freshly chopped parsley for a burst of color and extra flavor.

Notes

Don’t Overcook the Meatballs to keep them juicy. Use quality beef stock for a richer flavor. Make ahead by preparing the meatball mixture overnight.
