Mediterranean Baked Cod with Olives

A flaky cod dish bursting with fresh Mediterranean flavors, complemented by cherry tomatoes, olives, and capers.

Ingredients

  • 4 fillets Cod (flaky fish)
  • 2 tablespoons Olive Oil (extra virgin)
  • 1 unit Fresh Lemon (zest and juice)
  • 2 cups Cherry Tomatoes (halved)
  • 1 medium Red Onion (chopped)
  • 2 cloves Garlic (minced)
  • 2 tablespoons Capers
  • 1 teaspoon Dried Oregano (or fresh if available)
  • Salt (for seasoning, to taste)
  • Black Pepper (for seasoning, to taste)
  • 2 tablespoons Fresh Parsley (chopped)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Drizzle 1 tablespoon of extra virgin olive oil at the bottom of a baking dish.
  3. Toss together cherry tomatoes, red onion, garlic, capers, oregano, lemon zest, and remaining olive oil. Season with salt and pepper.
  4. Place the cod fillets in the baking dish, allowing the mixture to nestle around them.
  5. Squeeze the juice of the lemon over the cod.
  6. Bake for 20-25 minutes, or until the cod is cooked through.
  7. Sprinkle fresh parsley over the top before serving.

Notes

Opt for wild-caught cod for better flavor. Fresh oregano adds an aromatic touch. Feel free to add vegetables like bell peppers or zucchini.
