A quick and flavorful Mediterranean beef stir fry featuring ground beef, vibrant vegetables, and aromatic spices.

  • 1 cup bell peppers, sliced
  • 1 cup zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat until shimmering.
  2. Add minced garlic to the hot oil and cook until fragrant, about 30 seconds.
  3. Add the ground beef to the skillet, season with salt, pepper, oregano, and paprika, and cook until browned.
  4. Stir in the sliced bell peppers, zucchini, and halved cherry tomatoes. Cook for about 5-7 minutes until the veggies are tender.
  5. Remove from heat, garnish with fresh parsley, and serve immediately.
