A quick and healthy Mediterranean-inspired stir fry featuring lean ground beef, fresh vegetables, and tangy feta cheese.

Ingredients

  • 1 lb lean ground beef (or ground turkey)
  • 1 tbsp olive oil (extra virgin if available)
  • 1 small onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1 red bell pepper (diced)
  • 1 medium zucchini (sliced)
  • 1 cup cherry tomatoes (halved)
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 0.5 tsp smoked paprika (optional)
  • Salt and pepper (to taste)
  • 0.5 cup crumbled feta cheese
  • 2 tbsp fresh parsley (chopped)
  • 0.5 lemon (juiced)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the finely chopped onion and sauté for 2-3 minutes until translucent.
  3. Stir in the minced garlic and sauté for an additional 30 seconds.
  4. Add the ground beef (or turkey), season with salt, pepper, cumin, oregano, and smoked paprika, and cook for 5-7 minutes until browned.
  5. Stir in the diced red bell pepper and sliced zucchini; cook for 4-5 minutes.
  6. Add the halved cherry tomatoes and sauté for 2 more minutes.
  7. Turn off the heat and stir in the fresh lemon juice and half of the crumbled feta.
  8. Garnish with fresh parsley and remaining feta before serving.

Notes

This dish can be paired with couscous, quinoa, or fresh Mediterranean salad.
