A vibrant and flavorful dish combining grilled steak with fresh vegetables, hummus, and your choice of rice or quinoa, perfect for sharing with friends.

Ingredients

  • 1 lb Steak
  • 2 tbsp Olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1 cup Cherry tomatoes, halved
  • 1 Cucumber, diced
  • 1 Red onion, sliced
  • 1 Bell pepper, diced
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup Feta cheese, crumbled
  • 1 cup Hummus
  • 2 cups Cooked rice or quinoa
  • 2 tbsp Lemon juice
  • Fresh herbs (parsley, mint), for garnish

Instructions

  1. Season the steak generously with olive oil, salt, and pepper. Grill to your desired doneness.
  2. After grilling, let the steak rest for a few minutes to allow the juices to redistribute.
  3. In a large bowl, combine cherry tomatoes, cucumber, red onion, bell pepper, and Kalamata olives.
  4. In serving bowls, create a base layer of cooked rice or quinoa.
  5. Top the base with slices of steak and the colorful veggie mixture.
  6. Sprinkle feta cheese over the top, then add a generous dollop of hummus.
  7. Drizzle with lemon juice and garnish with fresh herbs like parsley and mint.

Notes
